Spicy Seafood Salad (Yam Ruam Mitr)


Owing to its proximity to the sea and lengthy coastlines, Thailand%u2019s cuisine has an abundance of seafood dishes. For versatility we have used a frozen seafood medley easily available in many supermarkets. The dressing can be made in advance and refrigerated until required.

Ingredients

  • 400g seafood medley
  • 1 Tbsp red onion (finely diced)
  • 8 mint leaves (finely shredded)
  • 1 heaped Tbsp fresh coriander (chopped)
Dressing
  • 1 clove garlic (finely chopped)
  • 3-4 bird's eye chillies (finely chopped)
  • 1 Tbsp fish sauce
  • 2 Tbsp lime juice
  • 1 tsp sugar
Combine all the above ingredients and place in a screwtop jar in refrigerator until required.

Preparation

  1. If frozen, allow seafood medley to defrost overnight in the refrigerator.
  2. Drain seafood before placing in a glass mixing bowl.
  3. Add dressing, mix well and serve immediately.
